VALENTINE LOVE LETTER COOKIES!

today, we made the most adorable valentine's love letter cookies! we used the same heavenly pillowy soft cookie recipe from yesterday's journal post and i've added the ICING RECIPE below! we also used the scalloped cookie cutter that came as part of the message cookie cutters (also this one) box set. the scalloped cutter is probably my favorite as it's so versatile! you can use it for ANY holiday + birthday party and imprint your favorite personalized message!

what you need for the icing!:
1 cup powdered sugar
2 teaspoons milk
2-3 teaspoons light corn syrup
1/4 teaspoon vanilla extract (my absolute FAVORITE and warning: once you try this you can never go back!)
1/4 teaspoon lemon extract

instructions:
1. cool cookies completely.
2. sift powdered sugar over bowl.
3. add milk and stir until smooth and thick.
4. stir in corn syrup + vanilla and lemon extracts.
5. transfer frosting into piping bags/container.
6. pipe a rectangle and fill in; let harden.
7. with a white decorating icing writer, outline and add envelope details like these mini confetti hearts.
